Busy Moms Recipes


My husband has been gone quite a bit lately but there's plenty of people around to keep me company. For those of you that don't know I live on family land and my parents are next door and my sister is just a pasture away. We eat dinner together all the time... like almost every night. This week has been super busy for my sister so  I have been doing the cooking this week and thought I would share a couple recipes. The first recipe isn't mine but I don't know who to give the credit to... my mom found it floating around facebook some time ago.

 
Pulled Pork Sandwiches:
one pork roast 2 pounds or so
1/2 cup club soda
1/4 cup brown sugar
bbq sauce
 
Place roast I crock pot and pour club soda over it. Add brown sugar and mix it around a little. Cook for 8-10 hours, shed and add your favorite bbq sauce. We make and can our own bbq sauce but if I give you the recipe then I'd have to kill you lol. Its my dads prized recipe :)
 
 
 
Shredded Chicken Sandwiches:
 
One large bag of raw chicken tenderloins (no skins, they come frozen in a bag at Kroger)
1/2 package of stove top (savory herb is what I used)
1 sleeve of ritz crackers
1 can of cream of chicken - 10.5 ounce 
1 can of cream of celery - 10.5 ounce
1 can chicken broth - 14.5 ounce
 
 
Cook your chicken in boiling water then shred. Crush the crackers and add them along with all the other ingredients to a crockpot mix and let cook for an hour or two. I always put a tablespoon or two of butter in too... call me Paula lol.
 
It was a hit after softball at my house this week!
